50% Iberian Acorn-fed Shoulder

Ham comes from the hind leg of the pig, larger and with more meat but also with more fat than what ham is made from. Due to the animal's own constitution and the fact that in ham the proportion of meat near the bone is lower than in the shoulder, the result is a product that cures more slowly, obtaining meat with softer flavor nuances than of the palette

When we talk about the Iberian breed, we are referring to a product that can only be made in the Iberian Peninsula, the percentage refers to the purity of this breed, and if we add to this the qualifier "Acorn-fed" we are already looking at something unique, exquisite and exclusive. For a ham or shoulder to be considered acorn-fed, the animal in question has had to spend its last phase of fattening in freedom in the Dehesas feeding on herbs, wild foods and of course, acorns. This diet plus an artisanal cooking process is what gives Iberian acorn-fed ham its special character in texture and flavor.
