50% Iberian Acorn-Fed Ham / Jamón de Bellota 50% Iberian breed

The Jamón comes from the hind leg of the pig, which is larger and has more meat but also more fat than what's used for shoulder ham. Due to the animal's composition and the fact that the proportion of meat near the bone is lower in ham compared to the shoulder, the result is a product that cures more slowly, yielding meat with smoother flavor nuances than that of the shoulder.

When we speak of the Iberian breed, we are referring to a product that can only be produced on the Iberian Peninsula. The percentage refers to the purity of this breed, and when we add the term 'Acorn-Fed,' we're dealing with something unique, exquisite, and exclusive. For ham (jamón) or shoulder (paleta) to be considered 'acorn-fed,' the animal in question must have spent its final fattening phase freely in the Dehesas, feeding on grass, wild foods, and, of course, acorns. This diet, along with a traditional curing process, imparts that special texture and flavor to Iberian Acorn-Fed Ham."
