DESCRIPTION
Characteristics
Vines planted in licorella costers located between 350 and 450 meters above sea level. The Garnacha is 20 years old and the Cariñena is centenary. Syrah is the youngest.
Vinification:
The first step in the winery is a careful choice of the grapes on the selection table. The grapes ferment in stainless steel tanks and we macerate between 7 and 10 days. After pressing, malolactic fermentation takes place in steel tanks and aging begins in the different materials.
Aging:
A quarter of the wine will be aged in cement tanks, another quarter in large oak vats and the remaining 50% will be aged in 220 liter second, third or fourth year barrels.
Tasting's notes
View:
Violet red color.
Nose:
Aromas of fresh but ripe red fruit, similar to cherry in liqueur, with balsamic notes of mint. Great feeling of freshness. Mineral point. Mediterranean forest herbs reminiscent of rosemary and lavender.
Mouth:
First sensation of silky power. Tasty. Fresh and soft at the beginning with the appearance of warmer sensations at the end. Long and structured.
Pairing:
Tapas and starters, cured meats and white meats.
