In Enrique Tomás, as Jamón experts that we are, we know in detail the characteristics of all our products and for this reason we know that the flavor of any Gran Reserva Paleta (Ham Shoulder) is soft and salty at the same time, with few nuances, but that is delicious and very appealing for palates accustomed to delicate tastes and textures.

The Gran Reserva paleta is obtained from the front legs of white pigs of the Duroc, Landrace, or Large White breeds, among others; pigs that are larger than Iberian ones, with thicker legs, less stylized, and usually white hooves, although this doesn't always have to be the case.

The pigs from which these shoulders are obtained have been raised on farms and fed with natural feed, cereals, and grass, which explains their very fine flavor. The curing process of this product is fifteen months and follows the same guidelines as any other shoulder or ham. At Enrique Tomás, we have the highest-quality shoulders, and in addition to offering them whole, we also have them sliced or boneless.

CURING PROCESS OF THE GRAN RESERVA PALETA

The Gran Reserva shoulder has a curing process of approximately fifteen months, which is longer than that of most white breed shoulder curing processes you'll find in the market. This is because our producers or chefs, as we like to call them at Enrique Tomás, dedicate the exact amount of time to each piece to achieve the flavor we're looking for.

Non-Iberian ham shoulders are ideal for daily consumption, as they have a mild aroma and an affordable price for every budget, so you won't have to wait for a special occasion to indulge yourself.

HOW TO ACQUIRE THE GRAN RESERVA PALETA

At Enrique Tomás, we have whole shoulders, but we also offer them sliced or boneless, why? Very simple. It's not the same to buy a shoulder to share with family and friends as it is for a meal or dinner for a small family.

Our packs of sliced shoulder weigh 80 grams and are hand-cut by our master ham slicers. This option is ideal for tasting right on the day of purchase, but if you prefer to cut them yourself, don't worry. We also have whole shoulders for you. As you can see, we have everything you need!
