Let’s go for the Soufflé
A dish that, as well as being delicious, complies with two rules that we at Enrique Tomás want to promote: speed and ease, so that you can enjoy cooking without spending too much time, and you can dedicate it to other tasks and pleasures if you wish.
Ingredients for 4 people

80 gr shavings of Iberian ham
250 ml Milk
5ml Dijon Mustard
Ground black pepper
Extra virgin olive oil
You will need small moulds like the ones you see in the picture to make and bake the soufflés.
First grease the four individual moulds with a little oil.
Chop the bread into small pieces and place in a bowl. Add the shavings of Iberian ham and mix with the cheese.
Beat the eggs lightly in another bowl. Add a dash of black pepper, the mustard and the milk, and beat a little more all at once.
Divide the mixture of bread, cheese and ham shavingsChip is a thin sheet obtained with wood or metalworking tool... into the moulds, cover with the egg-milk mixture and leave to stand for 30 minutes.
Preheat the oven to 180 ºC
Add a little more Emmental cheese to the sufflés on top, add a sprinkling of chives and bake for about 20-25 minutes. They will rise during baking but will go back down once they reach room temperature.
And serve them straight away because they’re at their best when they’re freshly baked!
