Vacuum packaging is a popular technique for preserving sliced ham for a longer period of time. The process involves placing the ham in a special plastic bag and removing all air from the bag before sealing it.

Vacuum helps preserve the quality of the ham by preventing oxidation and dehydration. Vacuum packaging also helps to prevent the ham from coming into contact with air, which can affect its flavour and texture over time, and eventually oxidise.

However, it is important to note that vacuum packaging is not a permanent storage solution for ham. Although it can extend the shelf life of the product, ham still has an expiry date which is usually a maximum of 6 months. In addition, once the vacuum is broken, the ham must be consumed within a reasonable period of time, usually within 3 days after opening.

In general, vacuum packaging is a good option for those who wish to prolong the shelf life of sliced ham. However, it is important to follow the proper storage instructions, always refrigerated between 3 and 8 ºC. Before consumption, it is recommended to take the ham out of the vacuum an hour before to allow it to reach room temperature, start sweating and take on its characteristic shine. It will be ready when the slices separate without breaking.
