We never tire of explaining why Iberian ham is good and in this case, in Enrique Tomás we are going to go deeper into the properties of Jamón Ibérico de Bellota, which we consider to be the best jamón in the world and a flagship product of our gastronomy. Good and healthy!

What does Jamón Ibérico de Bellota mean?

You know that the product is ham, but what do these surnames mean “Ibérico de Bellota”? Well, we start with the first surname that has to do with the breed of the animal: Ibérico.

In order for a ham to be considered Iberian, it must come from an Iberian pig with at least 50% purity. For the label to include the word acorn, the pig in question must have enjoyed what is known as Montanera. A period of freedom in the pastures where  Iberian pigs reach their ideal weight eating acorns, grasses and wild herbs, at the same time as they exercise and move around the long stretches of land.

So, what does Jamón Iberico de Bellota mean, it means that the ham comes from an Iberian pig (with a purity of 50, 75 or 100%) that has been fed on grasses, wild herbs and acorns during the montanera in the pasture.

Nutritional properties of Jamón Ibérico de Bellota

Having clarified the terms, we can talk about how good it is, since acorn ham is considered an ideal product to include in a healthy and balanced diet. Unlike other types of ham that can have a high salt content, acorn ham stands out for its heart-healthy contributions.

Oleic acid:

Jamón Iberico de Bellota contains large quantities of oleic acid, the same as that found in olive oil. This type of fat acts positively on our cholesterol, increases the good and reduces the bad.

Unsaturated fatty acids:

The fat present in acorn-fed Iberian cured meats is the most “heart-healthy” of all fats of animal origin.

Vitamins and Minerals:

Among the properties of Jamón Ibérico de Bellota are the presence of B group vitamines, beneficial for the proper functioning of the nervous system and brain. The presence of vitamin E, recognized for its antioxidant character and minerals such as copper, calcium, iron, zinc, magnesium, phosphorus and selenium.


A portion of 100 grams of acorn ham contains a contribution of approximately 250 kcal, so its moderate consumption can go hand in hand with slimming diets or hypocaloric.


The same ration of 100 grams of this incredible Iberian product implies a contribution of 43 grams of protein, so the Jamón de Bellota  is an ideal substitute for red meat.


During the curing process there is a chemical reaction called proteolysis. This process raises the digestibility rate of Jamón de Bellota to 85% and 100%, which means that it is an easily digestible food that allows maximum absorption of nutrients.
