Today we present you an eggplant roll with Serrano ham, tomato and cheese. This is a simple and healthy recipe, easy to include in any lunch or dinner and with which you will always get good results. As you know, vegetables are the basis of any Mediterranean meal. In this dish we use them as a base, with eggplant as a wrapper and tomato inside. Fresh and simple!
In our dishes we like to introduce all kinds of food, and as always, we do not want to give up cured meat, our specialty. We present you an eggplant roll with Serrano ham, tomato and cheese, a simple and healthy recipe, easy to include in any lunch or dinner and with which you will always get good results.
Gather the ingredients and place them at your fingertips to start cooking. Don't forget the chopsticks, they will be the key to prepare your roll.
Preheat the oven to about 180 ºC.
Cut the eggplants into thin slices (without breaking them), just enough so that they can be rolled well, as you can see in the first step of the image.
The next step is to season the eggplant slices with salt and pepper first (be careful with the salt that the ham already has!) and put them in the oven for about 5 minutes. You will see that they sweat a little, pass a paper towel over them to absorb the water they expel.
After 5 minutes, when the eggplants have sufficiently sweated, take them out of the oven, cut a couple of slices of tomato and place them on top of the eggplant. If you see that two is not enough, add more until the whole surface of the eggplant is covered.
Cut the mozzarella into thin slices and place them on top of the tomato, you can also add a little oregano to give it more flavor.
Then put the Gran Reserva Serrano ham on top, roll it all up and close it with a toothpick. It will be the key for the roll to last!
Place the rolls on a baking sheet, sprinkle with a little Parmesan cheese on top, and bake in the oven until the eggplants are golden brown, about 10-12 minutes.
They are delicious!
