We present a salad with spinach, zucchini, ricotta cheese, cashews and Enrique Tomás jamón. A fresh, simple and quick salad, ready to prepare in just 10 minutes!
Why did we choose these ingredients? Raw spinach leaves in salad are a digestive vegetable, with good flavor, lots of fiber and water, with a splash of olive oil they will be delicious. We combine them with zucchini, a vegetable also with a high percentage of water that can also be added uncooked as it provides an ideal texture to combine with certain foods, and a mild flavor that accepts a lot of harmonies. In turn, we chose ricotta cheese of Sicilian origin, a cheese that is consumed fresh, without pressing, salting or ripening. Its texture is soft and grainy and its flavor is extremely mild, making it the perfect cheese for desserts or light salads. Finally, we add cashews, a nut that becomes an ideal ally in this salad for its high content of fiber, healthy fats and proteins, which will give us that feeling of satiety. Of course we end up talking about jamón, one of the star ingredients of this salad.
The main difference between Serrano and Ibérico is that Iberian jamón (Jamón ibérico) is a product obtained from Iberian breed pigs and Serrano jamón comes from white pigs. The Iberian breed gives the jamón an exceptional category and flavor, especially due to the fact that the Iberian pig has the ability to infiltrate fat into the muscle, making its meat more flavorful and practically melt in your mouth. Thus, in this recipe we believe that either of the two can work and that is why we let you choose according to your tastes, goals or needs. Wash the spinach and drain well to place on the platter or plating plate.
Cut the zucchini into thin slices and add to the spinach.
Make small portions of ricotta cheese and spread as desired on the salad.
Add the jamón slices and cashew nuts to taste. Dress with extra virgin olive oil, vinegar and a pinch of salt (if necessary).
The Jamón gives the salad a salty touch, we recommend not adding salt or very little.
