Now that we are reaching the end of the summer, we must gradually leave behind the excesses and eating disorders of the holidays. In return, we must ensure that our bodies receive a good injection of vitamins and minerals to recharge our defences and be well prepared for seasonal colds and flu, especially with the threat of pandemic, added to an autumn period that is more unpredictable than ever. So let us prepare well with what we can certainly control, our food. Let’s eat local products based on our Mediterranean diet and above all let’s take advantage of those seasonal fruits that we’ll still have a few more weeks before the cold arrives, such as peaches, nectarines, apricots, cherries, strawberries, plums, figs and in general the red fruits that are so good at providing the antioxidants that we need so much.

As you know, fruits are a source of vitamins. They are very tasty at any time of the day. But yes, it is true that, especially among the youngest in the house, they are not usually very popular or maybe you are one of those who pass them on unless they come decorated in a dessert or as a complement in a dish. Well, either way, or just for the sake of trying them on a dessert or as a complement to a dish for a change, here are some ideas.

Pork fillet with green plums

Ingredients:

  • Pork fillet
  • 1 onion
  • 6 green plums
  • 2 carrots
  • 1 garlic clove
  • Fresh Parsley
  • White wine
  • 3 eggs
  • Ground pepper
  • Salt
  • Olive oil

Preparation:

  1. Boil the eggs, chop the carrots and onion. Put the carrots in oil over a medium heat in a casserole dish and when they are a little brown, add the onion.

If one thing has to do with a custard or a jelly cake, it is that, apart from being easily done, you can put any fruit you have at home or the one you like best. In the Turbomix it is even easier.

Ingredients:

  • 6 leaves of gelatine/jelly
  • 250 g Strawberries
  • 1/2 Banana
  • 1/2 Peach
  • 1 kiwi
  • 375 g Water
  • 40 g Sugar

Preparation

  1. Soak the gelatine leaves in cold water
  2. Cut the strawberries, banana, peach and kiwi into small pieces. Set aside.
  3. Put the water and sugar in the jug and program 8 minutes, 100°, speed 3
  4. Add the reserved gelatine and mix for 2 minutes, speed 3. Leave the mixture to warm up.
  5. Spread the flanners with a paper towel and oil. Pour in some of the gelatine. Spread the fruit and fill with the rest of the gelatine.

Fruit Salad with Syrup

We all know how to make a fruit salad, but we can eat it not only as a dessert but also for breakfast, afternoon snack and even as a refreshing first course in summer.

Ingredients and Preparation

These are the fruits that you have at home, but obviously with the variety that is available in summer, we recommend that you vary in size and colour.

You can put strawberries, peaches, nectarines, pineapples, grapes, blueberries, raspberries, melons or watermelons that will give you a delicious juice. The final touch is a splash of apple syrup or honey. Then put it to cool in the fridge at least 1 hour before serving. Again, the simplest is the most succulent.

Desserts with fruit

There are many things you can do. We love cakes with a variety of fruit, and in this season with so many apricots we propose a recipe.

Ingredients

  • A short dough puff pastry
  • 500 gr of ripe peaches
  • 1 egg
  • 100 ml whipping cream
  • 50 mg of sugar
  • 2 tablespoons of brandy (optional)

Preparation

In a round mould previously smeared with a little margarine or sprinkled with flour

  1. Place the dough extended and folded in its extreme part, cut out the area that protrudes from the container and prick it with a fork in the centre a little to prevent it from becoming too swollen and to pass the heat well
  2. Cover with baking paper, and put some weight on it, such as some cheakpeas, lentils or (raw) rice.
  3. Bake at 200 ºC for 15 minutes.
  4. While we cut the apricots in half and remove the bones.
  5. In a bowl mix the egg with the cream, sugar and brandy (optional). Beat it well with a hand mixer
  6. Once the base is cooked and taken out of the oven, we remove the weight of what we have put in.
  7. Place the already cut apricots. Add the cream and egg mixture
  8. We cover the cake with aluminium foil and put it in the oven at 190 ºC for 30 minutes, we keep an eye on it.
  9. Once outside, sprinkle the cake with a little sugar or brush it with jam or apricot syrup
