Although it may seem complicated, this recipe is very simple: you have to add to the rice roll (seasoned with the vinegar, salt and sugar sauce previously made), a thin slice of Iberian ham on top before cutting into pieces. Inside the uramaki you can put the ingredients you like the most, in this case, we have selected avocado, as it is an exotic and fleshy fruit with an excellent texture. In addition, this fruit lacks an overly sweet or acidic flavor, which makes it a perfect match for many ingredients. In this case, we want the Iberian ham to stand out, so we select an ingredient with a more neutral flavor that accompanies it but does not take away its prominence.

This recipe can be presented with ginger, wasabi and olive oil, making the fusion between Japanese and Mediterranean food even more evident.

 2 cups of special sushi rice
 2 and a half cups of water
 1 cup of rice vinegar
 4 slices of Jamón Ibérico Enrique Tomás

Preparamos todos los ingredientes: arroz para sushi, jamón ibérico cortado bien fino, medio aguacate y vinagre de arroz.
Primero, hay que dedicarle un tiempo al arroz ya que es uno de los elementos más importantes del plato. Recuerda que el arroz debe ser especial para hacer sushi.

La clave para que salga bien es lavar el arroz hasta que el agua salga transparente. Una vez hecho esto, tenemos que poner el arroz en un cazo con el agua a fuego fuerte con cuidado de que no se pegue al fondo y, una vez que comience a hervir, bajamos el fuego y lo dejamos 15 minutos con la tapa puesta.

Cuando haya transcurrido este tiempo, lo sacamos de la cazuela y le echamos ocho cucharadas del vinagre de arroz y lo dejamos reposar 5 minutos.

Once rolled, remove it from the mat and we will have the whole uramaki cylinder. We must cut it into small pieces of the same thickness and we can enjoy every bite. To give it a final touch, we recommend serving it with a drizzle of extra virgin olive oil and a little wasabi.
