Where do the ham shavings come from?

They come from the parts most attached to the bone and where we can only use the normal boning or deboning knife. They can be extracted from the entire bone of the ham and ham shoulder

Our shavings are of Iberian cebo ham, Iberian cebo de campo and Iberian bellota/acorn ham in 100 gr. and 400 gr. packets

The Jamón Ibérico de Cebo is made with one of the most outstanding products of Spanish gastronomy: the Iberian pig, a breed that is only found in the peninsula of the same name. In Enrique Tomás we want to exalt to the maximum this delight, that is why we offer a product of the highest quality, made from the back leg of Iberian pigs fed with feed, cereals and grass and cured for 24 months.

The Iberian pig is a breed unique in its species and only present in Spain and Portugal. Its genetics allow it to infiltrate fat into the muscle, giving its flesh white veins and unique taste and juiciness.

In Enrique Tomás we want to exalt this product to the maximum, for that reason we offer a high quality Jamón Ibérico de Cebo, elaborated after an exhaustive selection of the best specimens, with a rigorous dry cured process in which all the conditions are guaranteed to obtain, finally, a perfect and delicious Jamón to the palate.

Jamón Ibérico de Cebo de Campo - Selection

Jamón is an art and as such, we treat it very carefully so that all our customers enjoy the magnificent experience of eating jamón. Then, we begin with the mention that the jamón is made from Iberian pigs, animals unique in the world, which have the ability to infiltrate fat into the muscle. These pigs have been fed with feed, cereals and vitamins until they have reached 100 kilograms of weight, then they have been released into the pastureland where they have been able to eat freely not only acorns, but also wild fruits, grass and similar. Finally, and this is where the main difference of the Jamón from the rest types of Jamón lays: the fattening process is finished again with feed and cereals.

As for the dry-curing process, after a perfect cooking process, the pieces of jamón de cebo de campo spend a period of 24 months dry curing, so that when you arrive at your table, enjoy a product in the best point of flavour, colour and texture. The quality of the raw material and the delicate treatment of the product, following each process to perfection, is what guarantees us that all the Jamón of Enrique Tomás is the best.

In Enrique Tomás we invite you to enjoy one of the jewels of our gastronomy, the Jamón de Bellota Ibérico, a unique product that can only be made in the Iberian Peninsula, ideal for Jamón-lovers who want to taste a cured product full of nuances.

Made with the hind leg of pigs 50% Iberian breed, our Iberian acorn-fed ham is an ideal product for maximum enjoyment of the senses. Available only in the Iberian Peninsula, pigs of this breed are fed with fodder until they reach the first 100 kilos, then taken to the pastureland to carry out the final stage of fattening eating acorns, grasses and wild plants for 4 months.

This breeding along with the genetic particularities of the animal, gives a meat of unique flavor, with a jamón whose fat has infiltrated the muscle giving rise to a marbling piece of juicy aspect and with an oily touch that is exquisite to the palate.
