Jamón Ibérico de bellota

At Enrique Tomás we invite you to enjoy one of the jewels of our gastronomy, the Jamón Ibérico de Bellota, a unique product that can only be made in the Iberian Peninsula, ideal for jamón lovers who want to taste a cured jamón full of nuances.

Elaborated with the rear leg of Iberian pigs, our acorn-fed Iberian jamón is an ideal product for the maximum enjoyment of the senses. Available only in the Iberian Peninsula, the pigs of this breed are fed with feed until they reach the first 100 kilos, then they are taken to the pasture to make the final fattening phase eating acorns, herbs and wild plants for 4 months.

This breeding, together with the genetic particularities of the animal, gives the meat a unique flavour, with a ham whose fat has infiltrated the muscle, giving rise to a juicy, oily, veined piece that is exquisite to the palate.

Packs Jamón Ibérico

The Jamón Ibérico from Salamanca has a totally different taste to the Jamón from Huelva, but to be able to distinguish them you have to get to know them better, and there is no better way to do it than tasting them all at the same time with some of the savings packs that we have at Enrique Tomás!

The Book of experience. This book is the same as the previous packs, that is, it also allows you to taste the different types of Jamón according to their origin. But what's so special about it? Well, it's the only book in the world you can eat!

Box Bellota 100% Iberian (flavors of). With the previous packs we offer you the possibility to taste the jamón of the different variants and with these you have another option, to taste all the flavours of the same origin, that is to say, in a single pack you have chorizo, salchichón, lomo and Jamón from Salamanca, Huelva, Cordoba or Caceres/Badajoz.

Travel pack or pack Don´t hurt yourself. The travel packs are very original packages that we have in two sizes, 1.8 kg. or 3kg. The small package consists of 18 sliced sachets, two sachets of cubes, two sachets of ham shavings and one vacuum-packed with the ham bones, while the large one contains, instead of 18 sachets, 33 vacuum-packed sliced sachets together with the rest of the products. These packages are perfect to give to friends or family because they have a very original presentation, they are small travel bags.

Due to the large amount of meat in the same jamón, we will find different flavours: the “maza” is the softest part, the “contramaza” the tastiest and as we approach the bone we find more intensity.
Instructions Remove the sachets a few minutes before consumption and wait until they are at room temperature. A very easy way to know that the product is ready to be enjoyed is when the slices are easily separated without breaking. This is the perfect moment when this product has regained all its nuances of flavour, texture and aroma.

Mixed Bellota pack

This is a great way to try Bellota jamon from different regions. We found considerable variation in quality, though we cannot be sure whether that was just random variation or regional differences coming through.

We thank you for your comments. You are certainly right, It is not a random variation. Every region produces the ham in the same way, Yet it depends on the special touch of each and every "cook" (expert) to cure the ham. Also the feeding and the climate where they grow has an influence on the future ham. Yet, taste and quality does not hava to match. Ham is also a question of taste. There is no ham better than the other, if you like it. As you say in Enrique Tomás , the best ham is not the most expensive one but the one you like the most.
