Moncedillo Red Cheese


With the soft paste production procedures, we have developed a cheese refined with Chinata paprika, sweet, smoked from La Vera.

It is a natural and artisan cheese, self drained, not pressed, with an elastic and unctuous paste in the mouth and a natural rind, with a soft taste and smoked aromas evoked by the paprika. It is recommended to eat it with the rind to acquire the exquisite nuances of the mixture of flavors.

Pieces around 400 gr. (0.99 oz) with a maturation of about 40 days.

The Moncedillo brand

In its cheese factory located in Segovia, Spain, the spirit of producing products with the excellent sheep's milk of the area and in a traditional way prevails. The milk used comes from a unique family farm with splendid sanitary and quality qualifications. This milk is collected only on the days it is processed, thus avoiding storage and loss of quality of the final product.

Its cheeses with different maturations have no preservatives, no stabilizers or fungicides in the rind, and no artificial additives. It is a natural product that evolves over time in a clearly appreciable way, so that the consumer can taste how the cheese matures and acquires other nuances.

Each cheese is moulded, turned and brushed by hand, protecting it with special paper so that it maintains its optimum consumption point.
