Semi-soft cheese, not pressed:


Cheese made exclusively from raw sheep's milk, from our family herd in the province of Segovia. Handling and feeding influence its incredible texture when cut, very buttery on the palate. Its smell is clean and balanced, it has a lactic touch, with memories of sweet cereal and fruity notes.


Ripening time is approximately 40 days. When young, lactic, malty cereal and hay notes predominate. The texture is somewhat elastic and very buttery, high persistence in the mouth. As the ripening progresses, the aromas become more complex (notes of slightly toasted nuts) and a mature texture is maintained, even appreciating a good elasticity. Pleasant aftertaste of nuts (hazelnut) and a slight spiciness well integrated into the whole when eaten with the rind.
