At Enrique Tomás we have added the Spanish shoulder to our range of products. If the ham is the back leg of the pig, the shoulder is the front leg, whether from the white pig or the Iberian pig (the Iberian breed is exclusive to Spain). For anatomical reasons, they are different: the shoulder is smaller and lighter than the ham, but the elaboration process is exactly the same for both, according to the tradition and method used by the maestro ham producer. The difference will be marked by their size and their different physiological characteristics, which we will now go into in detail!
